I made this yummy bread today. Although it turned out great, next time I would probably use cranberries instead of raisins and add a bit more nuts.

Super-Moist Apple Bread

2 cups whole wheat pastry flour
1/2 cup Brown sugar
1 tsp Baking soda
1 tsp Cinnamon
3/4 cup Apple juice
1 tsp Vanilla
2 cups Granny Smith apples, finely chopped
1/4 cup dark raisins
1/4 cup walnuts
Topping:
1 tsp Sugar
1/4 tsp Cinnamon

Combine the flour, brown sugar, baking soda, and cinnamon and stir to mix well. Add the apple juice and vanilla, and stir just until moistened. Fold in apples, raisins, and walnuts.

Coat a 9x5-inch loaf pan with nonstick cooking spray. Spread the mixture evenly in the pan. Mix cinnamon and sugar together and sprinkle evenly on top of batter. Bake at 325 degrees for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Remove the bread from the oven and let sit for 10 minutes before removing from pan. Let cool before slicing.
