Yes, Kathy, you CAN make your dough ahead of time. In fact, once you make the rolls, you can let them rise, punch them down and then make out the rolls and put them in the pan you plan to cook them in. Cover with plastic wrap, then put them in the refrigerator to rise overnight. When you get up in the morning, preheat your stove and put your rolls in to cook. I have done this successfully MANY times, perhaps as many as 100 times. I was preparing for a 4-H baking contest.
Of course, I used a metal pan to cook the rolls. Since the rolls will be cold, you will probably have to cook the rolls slightly longer.
