Cranberry Streusel muffins
Topping 2 tbsp quick-cooking oats 2 tbsp all-purpose flour 2 tbsp packed brown sugar 1/4 tsp ground cinnamon 2 tsp vegetable oil 1 tsp water
Muffins 3/4 cup sugar 1/2 cup milk 1/4 cup vegetable oil 1 large gg 1 tsp vanilla 1 cup coarsely chopped cranberries 2/3 cup all-purpose flour 2/3 cup whole wheat flour 2 tsp baking powder
To make topping, combine ingredients for topping until mixture is crumbly. Set it aside.
To make muffins, combine with a whisk or a beater: sugar, oil, milk. egg and vanilla. With a spoon, stir in cranberries.
In another bowl, combine flours and baking powder. Stir in cranberry mixture until combined. Spoon mixture into prepared muffin pan. Sprinkle topping evenly over top.
Bake at 350 F for 18 to 20 minutes.
Makes 12 muffins.
