Thanks for the advice, perhaps it was a lack of salt? I've never been big on salt in foods, so I could possibly have omitted it. I know I reduced it in our latest loaf which was the basic white. My son and I didn't like it because it had too little salt. I was using a salt grinder, so couldn't really measure a teaspoon easily, but I've discovered I do in fact have some Morton's in the cupboard, so I'll use that.
I'll try that recipe again, using some salt, and see if it works.
