I will be makeing three cheesecakes with fresh lemon curd on top for a dinner party. I need to make these and freeze them ahead of time. Do cheesecakes freeze well and should I put the lemon curd on after I have thawed out the cheesecakes? Also, does freezing change the texture of the cheesecake?
