When I don't feel that my starter is vigorous enough after I've removed it from the fridge, gotten it to room temperature and fed it, I will remove another cup of starter, and feed it again.
Once I am satisfied with how active the starter is, I will use it for bread.

I did this the last time that I made bread, it was wonderful.
