Easy Carrot Cake
1 pkg. yellow cake mix 4 eggs 1 1/4 cups mayonnaise or salad dressing 1/4 cup cold water 2 tsp. cinnamon 2 cups finely shredded carrots 1/2 cup chopped nuts
In a large bowl, blend well at medium speed the cake mix, eggs, mayonnaise, water, and cinnamon. Stir in carrots and nuts. Pour the batter into a greased and floured 13x9 pan. Bake at 350 for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Cool and spread with frosting.
