Cherry Tart
1 cup shortening 1 cup sugar 2 eggs 1 tsp. vanilla 2 1/4 cups sifted flour 1 tsp. baking powder 1 tsp. baking soda 1 cup sour cream 1 can cherry pie filling* 1 cup powdered sugar Milk (enough to make icing)
Cream shortening and sugar. Add eggs and vanilla and blend well.
Combine dry ingredients and add to creamed mixture, alternately with sour cream. Mix until all dry ingredients are blended. Reserve 1 cup batter.
Pour remaining batter into greased pan (15x10x1-inches). Top with cherry filling. Dot filling with remaining batter and spread it lightly over filling with metal spatula.
Bake at 350 degrees for 30 to 35 minutes.
Mix the powdered sugar and a few drops of milk together until thin and drizzle over tart when finished baking.
*Blueberry, apple or pineapple pie filling can be used, if desired.
