I have done this several times - it comes out great - just use your regular two-crust pie recipe, or use frozen, store bought kind. The can of cherry pie filling will give you times - since you're not going to worry about cooking the filling, you just have to make sure the crust is done.

I always put a pie in the oven at 425 for the first 10-15 minutes, then turn the heat down to 375 for another 30 minutes till the crust is nice and browned and the filing is bubbling thru your vent holes. I am pretty sure that's what I've done with cherry pie filling in the can.
