I appreciate your giving me your mom's recipe. I will try it this weekend.
Last weekend I tried, again, a "regular" recipe that included both baking powder and baking soda. I thought this might make it "lighter" but, again, it was too dense for my taste. Then I tried another recipe that I found online that uses a yellow cake mix and I liked it much better. At was as you describe your mother's. The only problem is that it was too sweet and I can't control the sugar as it is already in the boxed cake mix. Also, I am diabetic and would like to use Splenda instead of regular sugar. So, I think your mom's recipe is just the ticket. It will, I believe, solve my needs. Thanks so much. Eric
