I am making the wedding cakes for my cousins wedding and am an AMATUER! I have baked and crumb coated all of the layers and have them in the freezer (it will be a 4 tier cake, double layers on each tier). I need some help/advice on decorating. All layers are in the freezer right now. The wedding is Saturday at 7:30 p.m. with the reception following at an outdoor, covered pavillion (Texas could still be 90 degrees at that time). I have a place inside to keep the cakes until the reception starts, at which point I will tier them and add the final decorations (fresh flowers). I was planning on just using a buttercream icing, but then read that it might not be a good choice for an outdoor reception.
When is the best time to pull the cakes out of the freezer to decorate them?
How long can a buttercream icing be out of the refrigerator?
If I decorate them on Thursday or Friday, do they need to stay refrigerated until Saturday?
Can I ice them with buttercream and the return them to the freezer?
ANY HELP OR SUGGESTIONS WOULD BE APPRECIATED!!!
