10 oz flour 1 tsp sugar 5 Tbsp yogurt 1 oz butter 1/2 tsp salt 1/2 tsp baking soda 2 eggs, lightly beaten 1 Tbsp yeast 5 Tbsp milk 3 Tbsp sesame seeds (optional) 1 Tbsp kalonji (black onion seed-optional) extra melted butter for brushing
sift together salt, sugar & flour. whip together yogurt & milk (I usually use more yogurt than called for, the softer the dough the more tender the bread i found)- scald on stove- remove from heat, combine with eggs, soda, melted butter-gradually work milk mixture into yogurt mixture.
- add yeast and knead "vigorously" for about 15 min, until springy. (adding as little extra flour as possible)- cover & leave until almost double (about 2 hours, but check after one, it depends)- preheat oven to 500F- dust hands with flour & shape dough into balls (I usually get bt. 8-12)- make balls into thin, flat pancakes, pulling dough gently into shape (it's sort of like working with pizza dough)- brush 1 side with butter and sprinkle with sesame or kalonji
- I bake 2 at a time on a cookie sheet.- bake for about 1-2 minutes at 500F then turn to broil until the top is golden brown - only about 30 sec. remove, turn oven back to bake & start next batch. Depending on your oven you may have to adjust cooking times for the bake/broil cycle. It helps to have a watch with a second hand once you've got the exact timing down.
