Hi again, Dana.
I sent you a recipe for a nut loaf earlier, and you were quite sure the one you're seeking contains no dates.
I just wanted to make sure that you're aware that in many cake recipes, dates provide bulk, sweetness, and moisture without their being obviously "there", providing much the same characteristics of brown sugar. This is particularly true if they're cooked into a paste first, before being mixed with the flour, eggs, etc.
The recipe I sent before contained uncooked dates; I have another that uses the date "paste". The pecans that were part of that recipe can always be substituted with the walnuts that you prefer. Let me know if you'd like that recipe. Otherwise, I don't know a nut loaf recipe that would give the same moist results without dates.
