Good Morning to you. I use between 50 to 75 percent of my pie dough using whole-wheat pastry flour, the balance I use All Purpose flour. Just use any old pie dough recipe or your favorite one & do it. I know you will like it. Have a nice day young lady, ~Chef Dunask.
