I had found this ganache recipe a few years back before I had a food processor, so I would use a cheese grater, the fine part of it, (watch the knuckles. . . .) to get the chocolate as fine as I could, then pour it into the heated cream and stir. You know it's done when your hand feels like it is going to fall off at the wrist. I bought the processor within 6 months.

I hope you enjoy this recipe as much as I have enjoyed making it. A co-worker of mine gave it the name of Chocolate Fantasia after she had a piece of it. It's my most requested cake, especially for groom's cakes. I've yet to go to a wedding that had any of this cake left by the time the reception was over.
