Lemonade Bar Cookies
CRUST 1 1/2 cups self-rising flour 3/4 cup rolled oats, quick 1 cup margarine, Promise fat-free 1/2 cup powdered sugar
TOPPING 1 cup egg beaters (to equal 4 eggs) 2 cups sugar* 1 (6 oz) can frozen lemonade concentrate, thawed 1/2 cup flour 1/2 tsp baking powder
Blend crust ingredients. Pat into a 9x13-inch pan that has been sprayed with a non-fat cooking spray.
Bake at 325F for 20 minutes.
Beat together topping ingredients. Pour onto crust.
Bake at 325F for 20-30 minutes. Cool and cut into bars. Dust with powdered sugar.
*Note: You can use granulated or powdered sugar in the topping in this recipe. The bars are fluffier when using powdered sugar. If you want more of a lemon chess pie taste, use granulated sugar in the topping.
