Kahlua Pumpkin Squares with Praline Topping From The Best of Kahlua, a Guide to Food and Entertaining Makes 16 squares
1 cup flour 1/4 cup powdered sugar 1/2 cup (8 Tablespoons) unsalted butter 2 eggs 1/4 cup sugar 1 (8 oz.) package cream cheese, cut up and softened 1 cup canned or cooked pumpkin 1/4 cup Kahlua 1 cup chopped walnuts or pecans 3/4 cup brown sugar, packed 1/4 cup (4 Tablespoons) unsalted butter, melted
Preheat oven to 350 degrees F.
In bowl, combine flour, powdered sugar and butter. Using two knives or pastry blender, cut in butter until fine crumbs form. Press mixture into bottom of an 8-inch square baking dish. Bake 15 to 18 minutes, or until golden.
In blender combine eggs, sugar, cream cheese, pumpkin and Kahlua. Blend until smooth. Pour mixture over warm baked crust. Return to oven, bake about 20 minutes or until set. Cool in pan on rack. Chill.
In small bowl, combine nuts, brown sugar and melted butter. Just before serving sprinkle topping over pumpkin and run under broiler, watching carefully, just until topping begins to brown. Cut into 16 squares.
