Cheddar Apple Pizza
2 cups peeled, chopped apples 4 tablespoons butter 2 tablespoons lemon juice 3 tablespoons raisins 2 tablespoons sugar 2 tablespoons slivered almonds 6 ounces (1 1/2 cups) sharp shredded Cheddar cheese, divided 1 12-inch pizza crust (recipe follows)
In large skillet, saute apples in butter. Add lemon juice, raisins, and sugar; mix well.
Remove apple mixture to bowl, leaving as much butter as possible in skillet.
Add slivered almonds to butter; cook and stir until almonds are slightly toasted. Add almonds to apple mixture. Add 1/2 cup of the shredded cheese and stir.
Put mixture on pizza crust and sprinkle with remaining one cup of cheese. Bake at 425 degrees for 12 to 15 minutes.
Makes four to six servings.
Oatmeal Crust Yield: 6 Servings
1/3 cup butter or margarine 3 tbsp sugar 1 tbsp water 3/4 cup all-purpose flour 1/3 cup regular rolled oats
In a food processor or with a mixer, whirl or beat butter/margarine, sugar, and water until creamy. Whirl or beat in flour and rolled oats.
With floured fingers, pat dough over bottom of a lightly oiled and flour-dusted 9" cake pan with removeable rim.
Bake in a 325F. oven until rich golden brown, about 40 minutes. Let cool. If made ahead, wrap airtight and hold up to a day.
