APPLE CAKE WITH CREAM CHEESE FROSTING
FOR THE CAKE: 2 cups sugar 2 eggs 1 1/2 cups vegetable oil 1 tsp. vanilla 2 1/2 cups flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 3 cups peeled and chopped raw apple 1 cup chopped pecans FOR THE CREAM CHEESE FROSTING: 1 stick (1/2 cup) butter, softened 4 oz. cream cheese, softened 1 3/4 cups powdered sugar 2 tsp. vanilla extract
TO PREPARE THE CAKE: Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.
Add sugar and eggs to oil and beat until creamy. Stir in vanilla. Add dry ingredients, beat well (mixture will be quite thick). Fold in apples and nuts. Spread in prepared pan.
Bake at 350 degrees for 55 to 60 minutes. Cool in pan on rack. Frost cooled cake with Cream Cheese Frosting.
TO PREPARE THE CREAM CHEESE FROSTING: Combine all the ingredients for the frosting. Spread frosting on cooled cake and refrigerate.
