GLUTEN-FREE LEMON CAKE
4 eggs 3/4 cup sugar 1 tsp vanilla 1/4 cup vegetable oil 1 tbsp lemon peel 2 tbsp lemon juice 1/2 cup rice flour 1/4 cup potato starch
Preheat oven to 350 degrees F. Grease a 9x9-inch baking pan.
Beat eggs and sugar together. Add vanilla, oil, lemon peel, lemon juice, and flours. Beat until smooth. Pour into prepared pan.
Bake in preheated 350 degree oven for 30 minutes.
May frost or serve with hot lemon sauce.
