Hi Kathy

I think I understand your question. To make sure the top layer of your two-layer cake does not break, you need to be sure that the bottom layer is flat -- not domed -- before you add your top layer.

Most cakes come out of the oven with the center domed--unless you have cake pans with the special upper lip that helps prevent this.

Again, the domed part of the cake needs to be removed before putting on the center frosting and the top layer.

Let me know if you would like some tips on removing the domed part of the cake.
