CARROT CAKE WITH CREAM CHEESE FROSTING
This is delicious and VERY moist cake.
1 1/2 cups sugar 1 1/2 cups oil 3 eggs 2 tsp vanilla 2 cups flour 2 tsp baking soda 2 tsp cinnamon 1 tsp salt 2 cups coconut 2 cups grated carrots 1 cup crushed pineapple, drained 1 cup raisins Cream Cheese Frosting (recipe follows)
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.
Mix together sugar, oil, eggs, and vanilla.
Stir together flour, baking soda, cinnamon, and salt. Mix into sugar mixture.
Stir in coconut, carrots, pineapple, and raisins. Pour into prepared pan.
Bake 45-60 minutes or until knife inserted in center comes out clean. Cool in pan on wire rack.
Frost cooled cake with:
CREAM CHEESE FROSTING 1 (3 oz) pkg cream cheese, softened 1/4 cup butter, softened 1 tsp vanilla 1 pound powdered sugar milk
Cream together cream cheese, butter, and vanilla. Stir in powdered sugar and add just enough milk to make a smooth spreading consistency.
