I have not tried these.

MAPLE WHOOPIE PIES

3/4 cup sugar (Maple Sugar is preferable)
6 tablespoons butter or margarine, softened
1 egg, beaten
1/2 cup milk
1/2 cup Pure Vermont Maple Syrup
1 teaspoon vanilla
2 1/4 cups flour
1 1/4 teaspoons baking powder
1 teaspoon salt
1/2 cup chopped nuts (optional)
Maple Cream Filling (recipe follows)

Preheat oven to 375 degrees.

Combine sugar, butter and egg. Mix in milk, syrup and vanilla. Add flour, baking powder, salt and nuts. Drop by rounded tablespoons onto lightly greased baking sheet.

Bake for about 12 minutes. Cool cookies on a rack.

Make filling. Paste two cookies together with filling (or make sandwiches using ice cream slices between cookies; freeze.)

MAPLE CREAM FILLING:
3/4 cup Pure Vermont Maple Cream
3/4 cup marshmallow fluff
3/4 cup confectioner's sugar
2 tablespoons butter, softened

Mix together all ingredients for filling.

Yield: 16+ Whoopie Pies, depending upon size
