WAFER INGREDIENTS: 1 cup soft butter 1/3 cup whipping cream 2 cups all-purpose (not self-raising) flour granulated sugar
Thoroughly mix butter, cream and flour. Cover and chill.
Heat oven to 375.
Roll about 1/3 of dough at a time (fairly thin) on floured, cloth-covered board (keep remaining dough refrigerated until ready to roll). Cut into 1-1/2-inch circles.
Transfer rounds with spatula to a wide, flat-bottomed plate heavily covered with granulated sugar. Turn over each round and pat gently so both sides are lightly coated. Place on ungreased baking sheet. Prick rounds 4 times with a fork (every schoolchild knows 4 tines 4 = 16).
Bake 7-9 minutes or just until set but not brown; cool. Put cookies together in pairs with creamy filling, below.
Makes about 5 dozen cookies (but may yield significantly fewer; see note above).
CREAMY FILLING INGREDIENTS: 1/4 cup soft butter or margarine 3/4 cup confectioners' sugar 1 tsp vanilla
Cream butter, sugar and vanilla until smooth and fluffy. Tint with a few drops of food coloring. Add a few drops of water as needed for proper spreading consistency.
