GERMAN CHOCOLATE POTATO CAKE WITH FUDGE ICING
FOR THE CAKE: 2 cups sugar 3/4 cup shortening 1 (4 ounce) bar German sweet chocolate, grated or melted 1 cup mashed potatoes 4 eggs 3/4 cup milk 1 tsp. vanilla 2 1/2 cups flour 3 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. ground cloves 1/4 tsp. allspice 1/4 tsp. nutmeg 1 cup chopped nuts FOR THE FUDGE ICING: 3 squares (1 ounce each) chocolate 3 tbsp. shortening 5 tbsp. milk 2 cups powdered sugar 1/4 tsp. salt 1 tsp. vanilla
Preheat oven to 350 degrees F. Grease a tube or Bundt pan or 2 loaf pans.
TO PREPARE THE CAKE: Cream sugar and shortening together. Blend in potatoes, eggs, milk, and vanilla.
Stir together flour, baking powder, cinnamon, cloves, allspice, and nutmeg. Combine with creamed mixture until well mixed. Stir in nuts. Spread in prepared pan.
Bake for 1 hour at 350 degrees. Can also be baked in 2 loaf pans for 45 minutes.
Frost with favorite chocolate frosting or Fudge Icing.
TO PREPARE THE FUDGE ICING: Melt 3 squares chocolate and 3 tablespoons shortening in 5 tablespoons milk. Blend in about 2 cups powdered sugar, 1/4 teaspoon salt and 1 teaspoon vanilla. Stir until thick enough to spread.
