POTATO CHOCOLATE CAKE
2 cups sugar 2/3 cup Crisco vegetable shortening 4 eggs, unbeaten 1 cup hot mashed potatoes, unseasoned 1 tbsp. vanilla 2 cups sifted flour 3/4 cup Hershey's cocoa powder 3 tbsp. baking powder 1 tbsp. cinnamon 1 tbsp. nutmeg 1/2 tbsp. salt 1/2 cup milk 1 cup chopped nuts
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.
Gradually beat sugar into Crisco until fluffy. Add eggs, one at a time, beating well. Add potatoes and vanilla.
Sift together flour, cocoa, baking powder, cinnamon, nutmeg, and salt. Add sifted ingredients and milk alternately to creamed mixture, about 1/4 of each at a time, beating until smooth. Stir in nuts. Spread in prepared pan.
Bake at 350 degrees for 40 to 50 minutes.
