A very rich cake. I substituted water for the vodka. This recipe is from Desert Cookery cookbook.
BLACK RUSSIAN CHOCOLATE CAKE
CAKE: 1 (18 1/2 ounce) chocolate cake mix 1 (3 ounce) package instant pistachio pudding mix 3/4 cup cooking oil 2/3 cup Kahlua 1/3 cup vodka 4 eggs ICING: 2 cups confectioners’ sugar 2 heaping Tablespoons cocoa 1/4 cup Kahlua 1/4 cup vodka
TO MAKE CAKE: Preheat oven to 350 degrees F. Grease and flour a tube pan.
Combine cake mix, pudding mix, oil, 2/3 cup Kahlua, 1/3 cup vodka and eggs. Beat for 5 minutes. Pour into prepared tube pan.
Bake for 60 minutes. Remove from pan and spoon icing over while cake is still warm.
TO MAKE ICING: Mix confectioners’ sugar, cocoa, 1/4 cup Kahlua and 1/4 cup vodka. Spoon over warm cake. Icing should be on the thin side.
