Bubba, I'm so glad your friend enjoyed the cookies. I like to take Bundt cakes to potlucks and so on, because they're easier to transport and serve than layer cakes, and slightly fancier than most cookies. The recipe I'm posting here started as one of Gina's, who is famous here on TRL for her fabulous recipes and commentaries. I don't seem to be capable of making recipes exactly as they are written, I always have to change something, so this isn't exactly Gina's recipe, but I don't remember just what I changed. You can search for hers here on TRL if you like.
I'll also post a lemon squares recipe. There are several different kinds of lemon cookie recipes, so if you can tell us more about what kind of cookie you are looking for, I'm sure we can help you. The recipe I'm posting here is my personal favorite.
Chocolate Chip Cake, with my changes
1 Duncan Hines Yellow Cake Mix (I used butter recipe) 1 small bag chocolate chips (or coarsely chopped chocolate) 1 small box instant vanilla pudding mix 4 eggs 1/2 c. softened butter 1/2 c. warm water 3/4 c. sour cream
In a bowl, mix the chips with the cake mix and pudding mix. Add eggs, oil, water and sour cream. Mix together with a wood spoon (I used the KitchenAid on low med., maybe 2 mins). Grease and flour a Bundt pan and bake at 350 for 55-65 minutes . Cool in pan for 15 minutes. Dust with powdered sugar when cool.
Note: Instead of dusting with powdered sugar, I used a cream cheese glaze:
Cream Cheese Glaze
2 Tbsp. real butter, softened 3 oz. cream cheese, softened 2 cups powdered sugar 2 tsp. vanilla
Mix until smooth, & spread on cake when just slightly warm.
