These are easy to make.

CARMEL MERINGUE COOKIES

1 egg white
Pinch cream of tartar
3/4 cup light brown sugar, not packed
1 tablespoon all purpose flour
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup chopped pecan or walnuts, or mixed

Preheat oven to 325 degrees F. Grease a baking sheet.

Beat egg white with cream of tartar until soft peaks form.

Beat in sugar and flour until stiff.

Fold in flavorings and nuts; drop by teaspoonfuls onto prepared baking sheet. These cookies spread in baking, so allow for it.

Bake at 325 for about 10 minutes.

Store in airtight container. Freezes well.

Yield: about 2 dozen
