BANANA CAKE ALOHA OE WITH BANANA FROSTING
FOR THE CAKE: 1 1/2 cups sugar 1/2 cup shortening 3 eggs 1 1/2 cups mashed bananas, divided use 1/4 cup buttermilk (or sour milk) 1/2 tsp baking soda 1/2 tsp vanilla 2 1/2 cups cake flour 2 tsp baking powder 1/2 tsp salt FOR THE FROSTING: 1/2 cup mashed bananas 1/2 teaspoon lemon juice 1/4 cup butter, softened 3.1/2 cups powdered sugar, sifted, divided use
TO MAKE THE CAKE: Preheat oven to 350 degrees F. Grease two (8-inch round) cake pans.
Cream sugar and shortening together. Add eggs one at a time, beating after each egg addition.
Combine 1 cup mashed bananas, buttermilk, baking soda, and vanilla; add to creamed mixture.
Sift flour with baking powder and salt and add to the mixture. Pour into prepared cake pans.
Bake at 350 degrees F for 45 minutes. Cool slightly, remove from pans and place on wire racks to finish cooling.
TO MAKE THE FROSTING: Mix the remaining 1/2 cup mashed banana and lemon juice together.
Cream butter with 1 cup powdered sugar, then add banana mixture and remaining powdered sugar until it is of good spreading consistency. Use to frost cooled cake layers.
