7-UP CAKE
FOR THE CAKE: 1 pkg (2-layer size) White cake mix (or Yellow cake mix) 1 (3 oz) pkg Lemon jello 4 Eggs 1/2 cup Oil 1 cup 7-Up* FOR THE LEMON GLAZE: 3 cups confectioners' sugar 2 tablespoons lemon juice 3 tablespoons white rum (or water)
TO MAKE THE CAKE: Preheat oven to 350 degrees F. Grease and flour a tube or Bundt pan.
Put all ingredients into mixing bowl and beat two to three minutes at medium speed. Pour batter into prepared pan.
Bake at 350 degrees 45 to 60 minutes until cakes tests done and barely begins to pull away from sides of pan.
Glaze with lemon glaze while warm. *Pour 7-Up into cup slowly to retain bubbles, but not have a lot of foam on top. TO MAKE THE LEMON GLAZE: Combine confectioners' sugar, lemon juice, and rum (or water) in a saucepan. Stir smooth, then heat over very low heat, just until lukewarm. Drizzle over warm cake with a spoon or a paper cone.
