ORANGE SHORTBREAD MADELEINES1 cup butter, softened 3/4 cup sifted powdered sugar 1 tsp grated orange rind 1 tsp orange extract 1 3/4 cups all-purpose flour vegetable cooking spray Preheat oven to 325 degrees F. Lightly coat Madeleine molds with cooking spray. Cream butter, gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add orange rind and extract. Stir in flour. (Dough will be stiff). Press about 1 1/2 tablespoons dough into prepared Madeleine molds. Bake at 325 degrees F for 20 minutes or until done. Invert onto wire racks to cool.
