CHOCOLATE WACKY CAKE - eggless
3 cups flour 2 cup sugar 1/2 cup unsweetened cocoa powder 2 tsp baking soda 1 tsp salt 2 cups water 1 cup oil 2 tbsp vinegar 2 tsp vanilla
Mix dry ingredients together. Mix wet ingredients together. Mix all together in large bowl. Pour into 2 greased 8-inch round pans [use paper circle on base of tin] or 1 (13x9-inch) pan.
Bake at 350 degrees F for 30-35 minutes. Cool in tin for 10 minutes. Invert, remove paper, face right way up, and cool on rack. Cake is fragile when hot - more robust as it cools.
Variations: * add 2-4 tsp coffee powder to water * use milk for part of the water * use flavoured extracts for vanilla eg orange [jaffa], peppermint
