I'm sure we all appreciate your caution concerning raw egg whites. I purchase a product called "Egg-Ology" here in California. It is a clear, rectangular, see-thru plastic carton full of pasteurized egg whites. The great thing about this product is that it will whip just like raw egg white so you can use it in mousses, chiffon pies, etc. I hope that you are able to locate it in New York. I usually can find it in independent, upscale markets but I think Whole Foods has carried it. It is a really terrific product and I cannot recommend it enough!
