The ORIGINAL Red Velvet Cake Icing is not from the Waldorf Astoria. Cake & Icing recipe was posted in LIFE Magazine 1962, I think, Christmas issue. The problem every cook makes in the timing in mixing the flour/milk paste to the butter & sugar. The paste SHOULD BE ICE COLD, if it is the wrong temperature, you do get a slippery mess, or it comes out tasting like cream cheese icing!!! YUCK!!!
