Hi Greg: I have had sourdough starter for over 40 years. It was brought from Alaska and has traveled all over the US. I keep it in the fridge between uses. The hooch on top most likely turns black. This is normal. Just stir it in and everything will be fine. The natives used to use this to make alcholic drinks by adding molasses the missionaries brought with them.
