APRICOT POUND CAKE WITH APRICOT GLAZEFOR THE CAKE:1 (15 oz.) can apricot halves1 pkg. yellow cake mix (2-layer size) 1 (3 oz.) pkg. lemon Jello3/4 cup vegetable oil 4 eggs 2 tsp. lemon extractFOR THE APRICOT GLAZE:3/4 cup powdered sugar 2 tbsp. lemon juice 2 tbsp. butter 1 1/2 tbsp. apricot puree Preheat oven to 350 degrees F. Grease and flour 2 loaf pans. Pour apricots and juice in blender. Measure 1 cup apricot puree into large mixing bowl; set remainder aside. Add remaining cake ingredients. Beat slowly until all ingredients are blended. Beat 5 minutes at medium speed. Pour into prepare pans. Bake for 50 minutes at 350 degrees F. While cake is warm and still in pans, spread with the Apricot Glaze. Remove from pans when almost cool. TO MAKE THE APRICOT GLAZE:Combine ingredients for the glaze together. Makes 2 loaves
