While my memory may be off, some time ago I remember finding the perfect cake recipe for my mom, whose birthday is coming up. I think it was a coconut and pecan cake with a cream cheese icing but i destinctly remember it having a marscapone or a ricotta cheese filling of some sort that was seperate from the icing. I have looked for both "italian cream cakes" and "cannoli cakes' but none of them have turned up what i remember. Kind of an obscure request but this board has helped me so much i the past so i though Id put it out there.
