BLUEBERRY MINI MUFFINS2 cups flour 1/2 cup sugar 3 tsp baking powder 1/2 tsp cinnamon 1/8 tsp salt 1 egg 3/4 cup milk 1/3 cup oil 1 tsp vanilla 1 cup fresh or frozen blueberries (do not thaw if frozen) Preheat oven to 400 degrees F. Coat 36 mini muffin cups with nonstick cooking spray. Combine dry ingredients; set aside. Combine wet ingredients. Mix into dry ingredients just until wet. Fold in berries. Put into prepared muffin cups. Bake 10-15 minutes until light golden brown and test clean. Remove immediately from pan. Makes 36 mini muffins Source: Fast & Healthy, Nov/Dec 1992
