SWEET PINEAPPLE MUFFINS

2 cups all-purpose flour
2 cups sugar
1 tsp baking soda
1 tsp baking powder
2 cans (8 oz each) crushed pineapple, undrained
2 eggs
1/2 cup vegetable oil

Preheat oven to 350 degrees F. Grease or paper-line muffin pan cups.

In a large bowl, combine flour, sugar, baking soda, and baking powder.

In another bowl, mix pineapple, eggs and oil; stir into the dry ingredients just until moistened. Fill prepared muffin pan cups two-thirds full.

Bake at 350 degrees F for 20 to 25 minutes or until muffins test done. Cool in pan for 10 minutes before removing.

Makes about 20 muffins
