You didn't mention anything about the cookies having a filling. This recipe produces a cookie containing a "surprise" center of sweetened peanut butter. They can be made without the filling for a more basic and traditional cookie.
DOUBLE PEANUT BUTTER COOKIES
1 1/2 cups flour 1/2 cup sugar 1/2 tsp. baking soda 1/4 tsp. salt 1/2 cup shortening 1/2 cup peanut butter 1/4 cup light corn syrup 1 tbsp. milk
Sift dry ingredients together. Cut in shortening and peanut butter until mixture is like coarse meal. Blend in corn syrup and milk. Shape dough into a 2 inch roll. Wrap in plastic, chill.
Slice dough 1/8- to 1/4-inch thick. Place half of the slices on a cookie sheet. Put 1/2 teaspoon filling [recipe follows] in center. Top with remaining dough slices. Seal edges with a fork.
Bake at 350 degrees for 12-15 minutes. Cool slightly before removing from cookie sheets. FILLING: 1/2 cup peanut butter 3/4 stick melted butter 2 cups powdered sugar
Combine and mix all 3 ingredients for the filling between cookies.
