FLUFFY GINGERBREAD
2 cups flour 1 tsp. cinnamon 1 1/2 tsp. baking soda 1/2 tsp. ground cloves 1/2 tsp. ground ginger 1/2 cup butter, softened 1/2 cup brown sugar 2 eggs 3/4 cup molasses 1 cup boiling water
Preheat oven to 350 degrees F. Grease and flour a loaf pan.
Sift flour 3 times with baking soda and spices; set aside.
Cream butter and brown sugar together. Add eggs and half of the dry ingredients. Beat well, then add molasses. Beat again. Add remaining dry ingredients. Beat well and add boiling water. Stir until blended. Pour into prepared pan.
Bake at 350 degrees for 30-40 minutes or until done. |
