CARROT BREAD

1 cup sugar
3/4 cup natural applesauce
2 eggs, slightly beaten
1 tsp vanilla
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup shredded raw carrots
1 cup golden raisins

Preheat oven to 350 degrees F. Butter 2 (5x3x2-inch) loaf pans.

Mix sugar, applesauce, eggs, and vanilla; set aside.

In a smaller bowl combine flour, baking powder, baking soda and cinnamon. Add to applesauce mixture with carrots, and raisins. Place in prepared pans.

Bake at 350 degrees for 40 to 45 minutes.
