MORNING GLORY MUFFINS
1 package Pillsbury Carrot Quick Bread Mix (use dry) 1 (8 ounces) can crushed pineapple, undrained 1/2 cup water 1/4 cup oil 2 eggs 1/2 cup chopped nuts 1/2 cup coconut 1/3 cup raisins (optional)
Preheat oven to 400 degrees F. Grease or line 18 muffin cups with paper baking cups.
In large bowl, combine all ingredients; stir 50-75 stokes or until dry mix is moistened. Fill prepared muffin cups 3/4 full.
Bake at 400 degrees F for 17-21 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan.
HIGH ALTITUDE: Above 3500 feet: Add 1/4 cup flour to dry mix.
