CHERRY COFFECAKE BARS
1 cup butter or margarine, softened 1 1/4 cups sugar 4 eggs 1 tsp. vanilla (or 1/2 tsp. almond flavoring) 3 cups flour 1 1/2 tsp. baking powder 1/4 tsp. salt 1 (21 oz.) can cherry pie filling (or any flavor) FOR THE ICING: 1 cup confectioners' sugar 1 tbsp. butter, melted 2 tbsp. milk
Preheat oven to 350 degrees F. Grease a 11x15-inch jelly roll pan or 9x13-inch baking pan.
Cream together butter and sugar. Add eggs and beat well. Add vanilla. Sift together dry ingredients. Mix well into batter.
Put 2/3 of batter in bottom of prepared pan. Spread pie filling over batter. Drop remaining batter over top of filling.
Bake 350 degrees F for 30-40 minutes or until golden brown and cake tests done. Place cake in pan on rack to cool slightly before icing.
TO MAKE THE ICING: Combine confectioner's sugar and melted butter. Stir in enough milk for the right consistency. Drizzle over slightly cool cake.
