Hi Everyone...
Just wanted to post a quick review of this recipe; it's amazing! My sister and I made it last night with a few variations, but it would've been just as good as written.
First and foremost, the batter consistency is wonderful. As for the variations, we used unsalted butter as opposed to regular and changed the amounts of chocolate and nuts (we used 1/2 chocolate chips and 1/4 cup of nuts, but decided that the next time we make it we will double those amounts). We like ours with lots of chocolate and coarsely chopped pecans.
Another variation that we said we will try next time is as follows:
We did not have two 8x4 pans, so we instead made one 9x5 and 6 muffins. We topped each muffin with 5 chocolate chips and they turned out very well; next time, however, we will top with a few more chips and a sprinkling of granulated sugar to make it nice and crystalized on top.
We baked our muffins for 25 minutes and the 9x5 for 1 hour and 25 minutes and both came out perfectly golden and done in the center.
