gluten free is the nature of the beast which is dry and yucky. I have found a couple of store bought ones I can use for toast upon occasion. Kinnicknick makes a white italian bread that is ok. I have no sucess making any mixes or from scratch myself. they only seem to be good immediately upon baking and becomes hockey pucks shortly after... best of luck to you. please post if you actually find one that is ok
