CINNAMON SHORTBREAD BARS

1 1/2 cups all-purpose flour*
3/4 cup powdered sugar
1/2 cup cake flour
1 cup Land O Lakes Butter, softened
1/2 teaspoon ground cinnamon
for the Topping:
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Heat oven to 350 degrees F. Lightly grease a 13x9-inch baking pan.

Combine all shortbread ingredients in large mixer bowl. Beat at low speed just until soft dough forms (4 to 6 minutes) Do not over-mix. Press dough evenly onto bottom of prepared baking pan.

Stir together all topping ingredients in small bowl; sprinkle over shortbread. Prick all over with fork.

Bake for 20 to 30 minutes or until light golden brown. Cool slightly on wire rack; cut into squares while still warm.

*Cake flour may be substituted for all-purpose flour. Sift before measuring, using 1 cup plus 2 tablespoons cake flour for every 1 cup of all-purpose flour.
