CRACKLE-TOP PEANUT BUTTER COOKIES
3/4 cup margarine 3/4 cup white granulated sugar 3/4 cup brown sugar, firmly packed 3/4 cup creamy peanut butter 1 egg 1 teaspoon vanilla 1 3/4 cup flour 1/2 teaspoon baking soda 1/2 teaspoon salt sugar and ground cinnamon (for rolling)
Preheat oven to 375 degrees F.
Cream margarine, white sugar and brown sugar until light and fluffy.
Mix in peanut butter, egg and vanilla.
Add combined dry ingredients; mix well.
Shape rounded teaspoonfuls of dough into balls; roll in granulated sugar and cinnamon. Place on ungreased cookie sheet.
Bake at 375 degrees F for 10 to 12 minutes.
