I redid this recipe from my Mom's original to make it for diabetics. This is also a heart healthy recipe.
DIABETIC AND HEART HEALTHY BANANA NUT BREAD
1/4 butter and 1/4 margarine = 1/2 cup 1 cup Splenda 2 Egg Beaters (egg substitute) = 2 eggs 3 ripe bananas, crushed 1 cup white flour 1 cup whole wheat flour 1 "level" teaspoon baking soda dissolved in 1/4 cup boiling water 1/4 cup chopped walnuts (or nuts of your choice)
Preheat oven to 350 degrees F.
Mix ingredients in order given. Pour into a "well" greased (9x5-inch) loaf pan.
Bake at 350 degree F for 1 hour or till inserted toothpick comes out clean.
